咖哩黃薑飯 Nasi Briyani

Ingredients
Tumeric Rice
- 2 cups of uncooked rice 白米
- 2 tbsp of turmeric powder 黄姜粉
- 2 stems of lemongrass 香茅
- 1 piece of star anise 八角
- 3 pieces of cloves 丁香
- 1 stick of cinnamon 桂皮
- 15 curry leaves 咖哩葉
- 60g of ginger 薑
- 2 tsp of salt 鹽
- 2 tsp of mushroom seasoning 香菇精
Curry Paste
- 3 tbsp of curry powder 咖哩粉
- 500g of chili paste 辣椒醬
- 3 stems of lemongrass 香茅
- 100g of turmeric 黃薑
- 50g of ginger 薑
- 60g of galangal 南薑
- 2 tsp of brown sugar 紅糖
- 1 tsp of salt 鹽
- 1 tsp of mushroom seasoning 香菇精
Main Ingredients
- 3 tbsp of curry powder 咖哩粉
- 200ml of coconut milk 椰漿
- 4 potatoes 馬鈴薯
- 15 curry leaves 咖哩葉
- 3 tbsp of cooked curry paste 熟咖哩醬
- 3 stems of lemongrass 香茅
- 1 piece of star anise 八角
- 3 pieces of cloves 丁香
- 1 stick of cinnamon 桂皮
- 12 pieces of vegetarian mutton 素羊肉
- 1 large bowl of water 水
- 2 tsp of brown sugar and salt 紅糖 鹽
- 1 tsp of mushroom seasoning 香菇精
Instructions
Tumeric Rice
- Wash the uncooked rice and set aside.
- Heat some oil in a wok. Stir-fry curry leaves, lemongrass, star anise, cloves,cinnamon and ginger until fragrant. Add the rice, turmeric powder and seasoning.
- Cook the turmeric rice in the rice cooker with an appropriate amount of water.
Curry Paste
- Blend turmeric, galangal, ginger, and lemongrass into paste using a blender.
- Heat some oil in a wok. Stir-fry the paste until it turns slightly brown. Add the chili
paste and stir-fry until the water is gone and the colour brightens up. This would take about 20 mins - Add the seasoning (i.e., sugar, salt and curry powder) and stir well.
Curry
- Peel the potatoes and fry them until golden brown.
- Stir the curry paste in the pan. Add the curry leaves, lemongrass, star anise, cloves and cinnamon, and stir fry until fragrant. Put in vegetarian muttons and fried potatoes, and add some curry powder to increase the flavor. Add a large bowl of water, followed by sugar, salt and seasoning. Lastly, add coconut milk.
黄姜饭 做法
1. 将白米洗净待用。
2. 炒热油, 将咖喱叶,香茅,八角,丁香,桂皮和生姜炒至香, 倒入白
米继续炒, 加入黄姜粉和调味科。之后, 放入电饭锅加入适量
的水,开电后把黄姜饭煮熟。
咖喱酱
1. 把黄姜,南姜,生姜,香茅用搅拌机打成糊状。
2. 炒热油, 将以上搅烂的糊倒入锅里炒, 直到变成有点褐色, 加入辣椒糊
继续炒, 直到水分去掉, 颜色变得鲜艳, 大约需要炒20分钟。
3. 加入调味料如红糖, 盐和咖喱粉, 搅拌均匀就可以了。
咖喱
1. 将马铃薯去皮后, 炸至金黄色。
2. 把以上炒好的咖喱酱放入锅, 加入咖喱叶,香茅,八角,丁香和桂皮一起
炒至有香味, 再放入素羊肉和马铃薯继续炒, 加入少许的咖喱粉增添
味道, 再加入一大碗的水和调味料如红糖, 盐和香菇精。最后, 加入
椰浆。
